Is your coffee Organic?
We always use organically grown coffee. However, obtaining organic certification can be a lengthy and costly process for our farmers. While we work exclusively with farmers who use organic farming methods, on occasion some of our coffees may not be officially certified. You can easily identify our organic coffees by looking for the certification in their descriptions and on the label.
Is your coffee fairtrade?
We are committed to ethical sourcing and strive to support Fairtrade practices wherever possible. Obtaining official Fairtrade certification can be a complex and expensive process for some of our farmers. While most of our coffees are officially Fairtrade-certified, we ensure that all our farmers are paid fairly and work under ethical conditions regardless of certification. Look for the Fairtrade certification in the description and on the label for our officially certified options.
What other certifications do your coffees have?
We strive to source coffee with certifications that align with our values, including coffee that is Rainforest Alliance certified, ensuring that they are produced with sustainable farming practices that protect forests, wildlife, and the well-being of farmers.
Additionally, we are proud to offer one Bird-Friendly® certified coffee. This certification is awarded by the Smithsonian Migratory Bird Center and guarantees that the coffee is grown under tree canopies that provide vital habitats for migratory birds. By choosing Bird-Friendly® coffee, you’re supporting both high-quality coffee production and critical bird conservation efforts, which is exactly what The Aviary stands for.
How does The Aviary support parrots?
At The Aviary, supporting parrots is at the heart of what we do. Our mission is to create a positive impact on both the environment and wildlife, particularly parrots, which inspire so much of our brand. Here’s how we make a difference:
- Educating Farmers: We collaborate with coffee farmers to provide educational opportunities about how their farming practices impact wild parrot populations. By sharing knowledge on how to create parrot-friendly environments, we help farmers adapt their methods to support healthy parrot populations.
- Promoting Sustainable Farming: We partner with farms that prioritise sustainability and biodiversity. By supporting these practices, we help protect the habitats that parrots and other wildlife rely on.
- Contributing to Conservation: A portion of our proceeds is dedicated to parrot conservation initiatives. These funds go directly to projects that protect parrot habitats, rescue threatened species, and educate communities on wildlife preservation. For 2025, we are support Macaw Mountain, a facility dedicated to protecting and rehabilitating macaw populations.
- Raising Awareness: Through our platform, we share the beauty and importance of parrots with our audience, inspiring them to care about conservation and support initiatives that protect these incredible birds.
By choosing The Aviary, you’re not only enjoying great coffee—you’re helping to protect wild parrots and the environments they call home. Together, we can sip sustainably and make a difference.
Coffee
All about our delicious coffee products
Why is my coffee sour and acidic?
Sour or acidic coffee often happens because the coffee is under-extracted. This means the brewing process didn’t fully draw out the flavours from the grounds, often due to water being too cool, too short a brew time, or coffee grounds being too coarse. To fix this, try grinding your coffee finer, using hotter water (around 92–96°C), or increasing your brew time slightly.
Why is my coffee burnt and bitter?
Burnt or bitter coffee is usually a sign of over-extraction, where the brewing process has pulled too many compounds from the coffee. This can happen if the water is too hot, the brew time is too long, or the grind is too fine. To solve this, try using slightly cooler water, a coarser grind, or reducing the brewing time.
What's the best way to brew your coffees?
The best brewing method depends on your preferences and the individual coffee beans, but we recommend starting with the French press, pour-over, or AeroPress to highlight the unique flavour profiles of our coffee in a less complicated way. Use freshly boiled water cooled to about 92–96°C, freshly ground coffee (the lighter the roast, the finer the grind should be), and follow a 1:16 coffee-to-water ratio (e.g., 15g of coffee for 240ml of water). Experiment with brew times and ratios to discover what works best for your taste.
How can I get the best out of a coffee?
To truly enjoy your coffee, use freshly ground beans and the right grind size for your brewing method. Store your coffee in an airtight container in a cool, dark place to preserve freshness. Pay attention to water quality—filtered water can make a huge difference. Finally, take the time to experiment with brewing techniques to unlock your coffee’s full potential.

How do I use whole beans?
Using whole beans gives you control over the grind size and is the best way to get the most out of your coffee. Simply grind the beans to match your brewing method: coarse for French press, medium for drip coffee makers, and fine for espresso. Always grind as needed to ensure maximum freshness and flavour.
How do I use the ground coffee?
Our pre-ground coffee is designed for convenience, and it’s ready to use straight out of the bag. Check the grind size to ensure it matches your brewing method. For example, use coarse grounds for French press, medium grounds for drip brewers, or fine grounds for moka pots. Store it in an airtight container to keep it fresh between uses.
