Why the aviary?
At The Aviary, we’re rethinking how coffee farming impacts the habitats it shares with some of the world’s most beautiful and endangered animals—parrots. Wild parrot populations are declining at an alarming rate due to the illegal pet trade and deforestation, with coffee farming being a significant contributor to habitat loss.
As coffee is the second most traded commodity in the world (second only to crude oil), the industry’s growth raises serious environmental concerns. That’s why The Aviary was created: to offer exceptional coffee that gives back. We pay a higher premium to farmers and provide education direct to farmers and cooperatives on sustainable practices, emphasising the importance of protecting parrots that share their land.
Each of our coffees features beans sourced from regions where parrots thrive, with every blend represented by a parrot species native to that area. By choosing The Aviary, you’re not just enjoying delicious speciality coffee—you’re actively supporting conservation efforts and sustainable farming in those regions. Military Macaw
The Military Macaw (Ara militaris) is a striking parrot known for its green plumage, red forehead, and blue flight feathers. This majestic bird is native to the tropical forests and mountainous regions of Mexico, Central America, and as far south as Bolivia, where it inhabits forests, canyons, and cliffs. Sadly, the Military Macaw is listed as Vulnerable on the IUCN Red List, with an estimated wild population of fewer than 10,000 individuals. Habitat loss, deforestation, and illegal poaching for the pet trade continue to threaten its survival. By supporting sustainable farming practices in these regions, we can help protect the vital habitats this macaw calls home.
