We do speciality coffee with a difference
Why the aviary?
At The Aviary, we’re rethinking how coffee farming impacts the habitats it shares with some of the world’s most beautiful and endangered animals—parrots. Wild parrot populations are declining at an alarming rate due to the illegal pet trade and deforestation, with coffee farming being a significant contributor to habitat loss.
As coffee is the second most traded commodity in the world (second only to crude oil), the industry’s growth raises serious environmental concerns. That’s why The Aviary was created: to offer exceptional coffee that gives back. We pay a higher premium to farmers and provide education direct to farmers and cooperatives on sustainable practices, emphasising the importance of protecting parrots that share their land.
Each of our coffees features beans sourced from regions where parrots thrive, with every blend represented by a parrot species native to that area. By choosing The Aviary, you’re not just enjoying delicious speciality coffee—you’re actively supporting conservation efforts and sustainable farming in those regions. Together, we’re working to secure a brighter future for these incredible birds and the ecosystems they call home.
The Effects of Coffee Farming on Rainforests, Parrots, and Their Habitats – and How The Aviary is Making a Difference
Coffee farming has a significant impact on rainforests and the parrots that call them home. Unsustainable practices lead to deforestation, habitat destruction, and declining wild parrot populations. Learn how The Aviary is working directly with farmers, sourcing ethical bird-friendly coffee, and donating to conservation efforts to protect these incredible birds and their natural environments

Species Of The Month
Scarlet Macaw
The Scarlet Macaw (Ara macao) is one of the most iconic and vividly coloured parrots in the world, known for its brilliant red, yellow, and blue plumage. This striking bird is native to the tropical lowland rainforests of Central and South America, with strongholds in Honduras, Costa Rica, and the Amazon Basin. Once widespread, the Scarlet Macaw has declined in many areas due to habitat destruction and trapping for the pet trade. It is listed as Least Concern globally by the IUCN, but local populations—particularly in Central America—remain at risk. In some regions, it's now considered locally endangered. Supporting shade-grown, organic, and bird-friendly farming practices in its range helps protect the forest canopy that this macaw depends on for food, shelter, and nesting. Every cup of coffee grown sustainably in these habitats plays a role in keeping the Scarlet Macaw flying free.
