Why the aviary?

At The Aviary, we believe great coffee should protect the habitats it comes from. Wild parrot populations are declining fast, largely due to deforestation, much of it linked to unsustainable farming, including coffee. As one of the world’s most traded crops, coffee has a powerful environmental footprint.

That’s why we do things differently. We source exceptional beans from regions where parrots still thrive, pay higher premiums to farmers, and support sustainable practices that protect both people and wildlife. Every coffee we offer is paired with a wild parrot species from its origin, and every cup helps protect them.

Scarlet Macaw

The Scarlet Macaw (Ara macao) is one of the most iconic and vividly coloured parrots in the world, known for its brilliant red, yellow, and blue plumage. This striking bird is native to the tropical lowland rainforests of Central and South America, with strongholds in Honduras, Costa Rica, and the Amazon Basin. Once widespread, the Scarlet Macaw has declined in many areas due to habitat destruction and trapping for the pet trade. It is listed as Least Concern globally by the IUCN, but local populations—particularly in Central America—remain at risk. In some regions, it's now considered locally endangered. Supporting shade-grown, organic, and bird-friendly farming practices in its range helps protect the forest canopy that this macaw depends on for food, shelter, and nesting. Every cup of coffee grown sustainably in these habitats plays a role in keeping the Scarlet Macaw flying free.
