Conservation and Coffee: How The Aviary Gives Back to Wildlife


When we started The Aviary, it was never just about coffee. Yes, we wanted to offer genuinely beautiful, ethically sourced beans because we're huge coffee snobs. But just as important was the why behind it all—our love for wild parrots, the forests they live in, and the people who share those landscapes.

Because in many of the places where the world’s best coffee grows—Kenya, Honduras, Brazil, Costa Rica—you’ll also find some of the most threatened ecosystems. Places where incredible bird species, including many parrots, are losing their habitats to deforestation, unsustainable farming, and illegal wildlife trade, and the coffee trade is contributing towards that devastation. 

That’s why conservation isn’t a side project for us—it’s built into everything we do, meaning we can sit comfortably knowing our coffee doesn't contribute to the destruction of crucial habitats.

5% of Profits Go Directly to Conservation
We’ve committed to donating 5% of our profits each year to organisations working to protect parrots and the habitats they depend on.

For 2025, we’re proud to be supporting Macaw Mountain Bird Park and Nature Reserve in Honduras—an incredible sanctuary and release programme that’s helping reintroduce Scarlet Macaws (the national bird of Honduras) back into the wild. These birds are iconic, but their wild populations have suffered devastating losses.

Macaw Mountain not only provides a safe haven for rescued and rehabilitated parrots, but also works with local communities and government partners to release them into protected areas—ensuring they’re not just surviving, but thriving in their natural environment. It’s real, long-term conservation, and we’re honoured to be part of it.

Coffee That Protects More Than Just Your Morning Mood
By choosing to buy from The Aviary, you’re not just getting a delicious bag of coffee—you’re helping support ethical farming, bird-friendly habitats, and direct action for wildlife.

We work only with farms that grow their coffee responsibly—some of which are certified Bird Friendly, Fairtrade, Organic, or Rainforest Alliance—but we also support smaller producers using sustainable practices who can’t afford the certifications but are doing all the right things.

It’s about more than a logo. It’s about relationships, transparency, and real impact.

We’re also in direct contact with our farmers, sharing knowledge on how to improve farming practices, support diverse bird and parrot ecosystems, and protect the wildlife that depends on their land to survive.
