How to Make a Vanilla Iced Latte with an AeroPress

Nothing says summer quite like an iced latte—and when you make it at home with great coffee and real ingredients, it tastes even better than the expensive café versions. This vanilla iced latte is smooth, sweet, and refreshing, with bold coffee flavour balanced by creamy milk and a touch of vanilla. It’s simple, satisfying, and just indulgent enough.

For this recipe, we’re using Rainforest Sunshine—our Brazilian medium roast with notes of caramel, chocolate, and roasted nuts. It’s bold enough to hold its own against milk and sweetness, and smooth enough to drink all day long.

What You’ll Need:

  • 15g of high quality coffee, ground for AeroPress (medium-fine)

  • 100ml hot water (around 90–94°C)

  • 100–150ml cold milk (dairy or non-dairy)

  • 1–2 tsp vanilla syrup (or to taste)

  • Ice

  • AeroPress & filter

Step-by-Step Vanilla Iced Latte with AeroPress

1. Brew your coffee
Set up your AeroPress in the standard (upright) position. Add your 15g of ground coffee, then pour in 100ml of hot water. Stir for 10 seconds, insert the plunger and allow to steep for 2 minutes before pressing down slowly over a mug or jug.

2. Add your vanilla
While your coffee is still warm, stir in your vanilla syrup so it dissolves completely. Start with 1 tsp, taste, and add more if you like it sweeter.

3. Fill your glass with ice
Grab a tall glass and fill it with ice. You can go halfway or all the way—up to you.

4. Add milk
Pour in your cold milk (about 100–150ml, depending on how strong you want your latte).

5. Pour in your brewed coffee
Slowly pour the AeroPress coffee over the ice and milk. It’ll swirl and layer beautifully at first—give it a gentle stir if you want it fully blended.

6. Sip and enjoy
That’s it. Smooth, chilled, vanilla-sweet perfection with all the boldness of a proper espresso-style shot—without the espresso machine.

Why Rainforest Sunshine Works

This medium roast from Brazil is rich and mellow, with chocolate and caramel notes that play beautifully with the vanilla and milk. It’s smooth enough to be refreshing, but with enough character to shine through the ice.

And like all our coffees, it’s ethically sourced and supports wildlife conservation. Rainforest Sunshine is inspired by the Blue and Gold Macaw, and every purchase helps protect habitats like those in Brazil’s South Minas region.

Final Thoughts

This is one of those iced coffee recipes that feels fancy, but takes five minutes to make—and it’s endlessly customisable. Swap in oat milk, almond milk, or add cinnamon or nutmeg on top for something a bit extra.

When the weather’s warm and you want something sweet, cold, and still caffeinated, this vanilla iced latte hits the spot. Try it with Rainforest Sunshine and turn your kitchen into your new favourite coffee stop.
